Can the manual steering linkage (pitman arm, center link, idler arm) from a 71 maverick be used to convert a 76 model w/ps to manual steering. I know the later models changed the design of the linkage but it seems if you used the all the parts of the earlier models it would work.

Not sure on the Mav's, but on the Falcon there are different size splined shafts. Better measure the opening on the pitman arm. 6 to V8 was different as were years.

Why not just use the Grab a trak manual steering adapter from Mustang Plus (1-800-944-9980 or mustangplus.com)

Well I already have the all the parts off a 71. I now have a 76 comet I'm trying to convert. All gearboxes have the same spline count.
