Maybe the 6 cyl rad isn't up to cooling the 351 w/ lots of goodies. More power equate to more heat. I think ur always going to have problems w/ that setup.
Consider going w/ a radiator w/ more cooling capacity. A lot of the guy's here are using the alum radiator marketed by Champion Cooling, including me.
They can be acquired on Ebay for something like $200.00 bucks.

Do you have a spring in the lower radiator hose to keep the hose from collapsing?

...in addition to the previous suggestions, the radiator could be too small but if in good condition it should still keep it cool in normal conditions. It may be restricted or if it overheats at idle, you may have airflow problems as well. I have had the problem of the lower radiator hose collapsing at higher engine speeds myself.

Stuck thermostat, head gaskets backwards, poor fan setup, collapsed lower hose, malfunctioning water pump, could be a lot of different things.

Generally, if it runs hot at highway speed, the radiator's too small. If it's at idle it may be your fan isn't big enough or you don't have a good shroud! The shroud is most important on our cars for summer heat, idling in traffic, especially if you're using AC!:)

When my thermostat stuck open my car could idle forever in my garage without going over 140*.
