I'm old school (or just old maybe), but my 76' has a 73' 3 speed manual floor shift, and I was wondering what the fluid type is so I can change it while I have it out.

These days most use 75W-140 that will make shifting easier when cold and provide better protection when hot than the straight weights of old...

What was recommended 40 years ago has been replaced by better lubricants...

The old weight, that I remember, was 90w - 120 gear oil

What about synthetics? Are they better than standard gear oils?

Non synthetic, 90-140 is what works best in the Old Toploader 3 and 4 speeds.

Found 75w140 (mostly synthetic), but no 90w140. Any suggestions?

Nope, this isn't what you'd call a "high-tech" deal here. Steel gears with brass blocker rings, nuthin fancy inside them. 75-140 will do too. I wouldn't use the synthetic though.
