Would there be any increase in oil pressure if I switch from 10w 30 to 20w 50? Also would this cause any problems. Would I see any performance changes? Thanks...

Forgot to mention the engine is a 75 351w.

it should increase. the hevyer wieght has a highter resistance to flow. the oil pressure a motor makes is dependent on the gaps on the main, rod and cam bearings. the bigger the gaps the thicker the oil needs to be to build up pressure.
you should run the lightest wiegth oil that will give good oil pressure. if the motor is freshly machined and built then the machinest will have a recomendation on the oil wieght.
thicker oil could cause the horse power to drop due to needing more power to pump it through the motor.

Gotta watch air temps.....You don't want to run a heavy oil in real cold weather

Well with all that said is there a good medium between 10w 30 and 20w 50?

If your pressure is not at relief pressure then using thicker oil will sometimes raise the pressure, 10w40 or 15w-40 but if you can find a straight 30w synthetic it might be better all round.
