Add the rear tire size into your thoughts here. When I road raced, rear tire size was a like a cheap quick change depending on the track. Tall for high speed and short for rapid excelleration. never had to touch the diff gears. Tires do make a big difference. I have 3.08's and would rather have 2.79. I don't drive mine every day, but when I do that 250 is singing at 70mph. I did a 2.79 with T5 set up a few years ago, but that was too much. Couldn't get into 5th until over 70, but it was fun...
I personally would never go above 3.25 on a car without overdrive that will see regular highway use. Hell, the 2.79's in my car seem like too much sometimes. Most people probably don't drive their Mavericks 66 miles a day at 70-80 mph on the interstate like I do though. I'll probably looking at 3.55 gear for my car soon, and put a T5 in it. The rear end in my car has 306,000 on it, and it's starting to whine pretty bad, chunk needs rebuilt.
